Szechuan pepper

Of this is provided with a pleasant citrus spice especially the aromatic fruit or seed capsules. Named this "fake" Pepper is the Chinese province of Sichuan, where it is native. It usually grows wild on bushes and shrubs up to high mountainous regions. Is harvested in the autumn, then the ripe fruits are dried in the sun until they open. The small black seeds then fall out usually the most flavor is in the capsule walls.

The more medium-hot Szechuan pepper is essential for Asian cuisine, where it is often combined with hot chilli varieties. Characteristic are the tingly taste and a slight numbness on the tongue. Outside Asia, the Szechuan pepper was hardly available until a few years ago.

Szechuan pepper is ideally suited to all stir-fries, bright types of poultry and fish dishes. Pepper Szechuan pepper mixtures gives a fresh citrus note. Mixed with cinnamon, fennel, star anise and cloves one knows the seasoning as the classic "Chinese Five Spice" spice.
